Food for the health conscious fish aficionado
Fish is an excellent source of nutrition, including first-rate proteins and beneficial fatty acids. A lot of us unfortunately include very little fish in our diet, which is sad when you think about how much we could gain from eating fish at least twice a week. If you want to increase your fish intake, you can for instance start by picking up some tilapia the next time you go grocery shopping. Tilapia is inexpensive and readily available, and it can be utilized in a wide range of different tilapia recipes. Why not serve it with a creamy mango and avocado sauce? Both the mango and the avocado come packed with vitamins, and this tilapia recipe also contains a dash of olive oil filled with antioxidants. To begin with, you need to preheat you oven to 400°F. Then it is time to start preparing the salsa by peeling, seeding and dicing 1 mango and 1 avocado. Finely chop 1 red onion and 1 jalapeno pepper (don’t forget to remove the seeds from the pepper first). Coarsely chop 3 tomatoes and ¼ teaspoon of fresh cilantro. Mix the mango and the avocado with red onion, japaneo pepper, tomatoes and fresh cilantro and a glass bowl. Stir in the zest of 1 lime,1 tablespoon of minced gineroot, and 1 teaspoon of salt. Make sure that all the ingredients are well blended before you set the salsa aside to rest in room temperature. In a shallow baking dish, combine 1 ½ tablespoon of grated orange zest with ¼ cup of orange juice, 2 tablespoons of olive oil, and salt, pepper and red pepper flakes to taste. Pat 20 ounces tilapia fillets dry using a paper towel before placing them in the baking dish and using the orange zest mixture to coat them well. The tilapia fillets should be arranged in a single layer in the baking dish and baked until you can flake them easily using a fork. (10-12 minutes is normally enough.) Serve the baked fillets with the salsa. ¡Buen provecho!
